As the sole unpasteuried Farmhouse Red Leicester in the world, Sparkenhoe Red Leicester stands as a testament to the Clarke family's dedication. Reviving Farmhouse Red Leicester in 2005, the Clarkes started a mission that hadn't been pursued for half a century. Hailing from a three-generation farming family, Clarke's dissatisfaction with the quality of Red Leicester prompted him to take action when challenged by friends to use his own milk to create a superior version.
