Instead, they rely on a fermented mixture of organic white flour, rye flour and stoneground wholemeal flour combined with water, containing wild yeast and important friendly bacteria. This process not only gives sourdough its tangy flavour and slightly chewy texture but also has distinct taste, completely free from additives.
